Retail: Be-Bop Biscotti

For seven years, Sarah Holmes worked for Royal Blend, starting Royal Blend’s bakery. When the store changed hands in 1998, Holmes said she saw it as an opportunity to start her own business.

In 1999, Be-Bop Biscotti was created. From the beginning, Holmes and husband Michael, both jazz lovers and musicians, began advertising in national coffee trade magazines and going to coffee trade shows. Today, the couple’s biscotti can be found in coffee shops and gourmet grocery stores all over the nation. In addition to doing all of the baking and shipping from their location in Bend, the couple also operates a small retail store in the space, where walk-in customers can sip coffee, hear jazz playing over the speakers and taste 19 different flavors of biscotti.
