REDMOND – Madaline’s Grill is a multicultural tour de force. Owner and chef Pablo Pena specializes in American, Italian and Asian cuisine. He can also make a tasty fajitas combo.
After immigrating from Jalisco, Mexico, as a child, Pena began working in the food service business at a Mexican restaurant in Tigard. Pena rose rapidly through the restaurant ranks, moved to Seattle, learned to cook Chinese food and studied at the feet of a master chef.
In 2002, he realized his longtime dream, opening Madaline’s Grill in the former Pizza Hut in Redmond. These days, Pena greets guests and prepares steaks, pasta, Thai chicken wraps and mean Mexican entrees.
The Madaline’s Grill selection is as voluminous as it is varied.
He has a vast selection of Mexican fare and just about everything else. For breakfast, Pena offers a dozen specialty omelets.
Lunch and dinner fare ranges from the 8-ounce border burger (ground chuck, avocado, bacon, Swiss cheese, lettuce, tomato, onion, pickles, Thousand Island on garlic sourdough grilled bread) to the 12-ounce rib eye steak. There are also numerous chicken, pasta and seafood entrees, as well as 10 different salads to choose from.
A $4.99 children’s menu sports spaghetti, chicken fingers, macaroni and cheese and breakfast offerings.
”My goal is to make good fresh food from scratch,” Pena said. ”You can find almost everything you want here.”
The interior has been transformed since its pizza days. When Pena leased the building, he converted the entire kitchen and brought in all new furniture.
Recently, Madaline’s added a patio, which provides outdoor seating for up to 70 people.
”This is my dream restaurant,” said Pena.
