Asparagus a good source of potassium, folic acid

Published 5:00 am Thursday, March 20, 2008

Asparagus is low in fat and calories and a good source of vitamin K, which helps blood clot properly. It also has a healthy dose of folic acid, B vitamins, potassium and fiber.

Watch out: There are lots of yummy toppings for asparagus, not all of them healthy. Be careful of how much melted butter or hollandaise sauce you add.

Tips: Spring is asparagus season, so look for plenty of these vegetables at local supermarkets. Steamed asparagus with lemon juice makes a refreshing side dish, or add to omelettes, pasta or quiches for extra flavor.
