A pistachio-packed pesto

AUSTIN, Texas — Monica Pesoli has found a niche for herself promoting Italian culture in Texas.

Although she was born in the U.S., she learned how to cook, speak and think like an Italian from her dad, who was born here to Italian parents but went back to Italy to live and teach in the 1950s. When Pesoli herself became a parent, she started cooking with her three kids and eventually branched out into teaching culinary and language classes to fellow Italophiles in Houston.

Pesoli now lives in Austin, Texas, where she writes a blog called Like an Italian (likeanitalian.wordpress.com). A few weeks ago, she posted several photos of a pistachio pesto that drew my attention. Here’s the recipe.
