French Market: 79 — Tomato sauce and butter on counter at room temperature. Garlic in oil on counter at 74 degrees. The reduced oxygen packaging process is unapproved or does not follow required procedures. Floral arrangements stored in walk-in cooler on top shelf. Open bottle of Coke and cup of coffee on counter. Soup cooling in containers, which are too deep. Various utensils stored in standing water that’s 74 degrees. Ice scoop is stored on top of ice machine in a difficult to clean area. Various foods stored with cloth towels, wood spoon, muddler. Pressurized whipped cream dispenser is not air dried. Two drainage pipes at three compartment floor sink, drain onto floor. Receptacle is not covered in female restroom. Hole in wall at dish machine needs sealing. Unnecessary items or litter west of building.

Big O Bagels (Galveston): 82 — Raw shell eggs stored over ready-to-eat products in walk-in cooler. Sausage patties in hot holding unit at 96-110 degrees Fahrenheit. The use of time as a public health control was not properly applied to butter on counter. No digital probe thermometer available. No thermometer in reach in cooler. Toilet rooms aren’t conveniently located and accessible to employees during all hours of operation.

Sunriver Crosswater Grill: 85 — Cooler on the line is holding 45-50 items in 50 degree range not phf (carrots, celery, etc.). Discarded phf items out of temp. Borderline temps (43-44) in reach-in cooler (very full) and butter at room temp. Creme brulee and chocolate mousse past date in refrigerator. Lunch meat on line opened but not dated. Cloth napkin held over clams. Reusing tin pie plates for cooking and reheating. Ice machine with build up of biofilm and hard water on baffle. Dust and grease build up on interior of the hood system including the ansul system and lighting.

El Caporal (Twin Knolls): 86 — Observed shredded lettuce in water holding at 60 degrees Fahrenheit in bus tub on countertop. Observed no functional chlorine test strips for use with chlorine sanitizer at warewashing machine or wiping cloth buckets. Observed front hand-washing sink by beverage station and designated hand-washing sink at bar did not have hot water available. Observed main hand-washing sink in kitchen was blocked with pile of boxes.

Tetherow Grill: 87 — Ice on the line is not up to the level of the product. Hummus and fish batter is not maintained at proper hot or cold holding temperatures. Several refrigerated items in Solomon’s kitchen past date mark. No advisory on breakfast menu. Missing asterisk on egg dishes. Soda guns with biofilm build up.

Health inspections were conducted by the Deschutes County Public Health Department and reflect violations observed at the time of inspection. The violations can range from general sanitation and maintenance to violations that have a direct connection to preventing foodborne illness to violations in procedures by maintenance that control the risk of foodborne illness, such as documentation, labeling, personnel training and equipment. After inspections, food vendors were allowed to correct violations to improve scores prior to a follow-up inspection.
