Expired cream cheese for rolls in the refrigerator. Sushi rice at room temperature is not properly marked. Sushi menu does not include consumer advisory and items raw or undercooked are not marked. No soap at bar hand sink near soda gun.

Riverwoods Country Store: 82 — Interior of pizza reach-in has accumulation of soil and food debris. Leaks noted on waste pipes under hand sinks in Subway area, dish sink and self-serve area hand sink. Spray bottles labeled vinegar and water contained some kind of cleaner. Food debris and soil noted throughout the facility including on shelves in back storage area, under walk-in shelving and under dish-washing sinks.

Rockin’ Dave’s Bistro and Backstage Lounge: 82 — Cartons of raw shell eggs were stored directly above uncovered container of cooked broth. Expired ranch cream cheese, turkey salad, gazpacho, poached chicken and orange liquid in refrigerator. No date-mark on turkey scraps, tuna salad, container of portioned sour cream and salsa, container of crumbled, cooked sausage and container of garlic oil. No chlorine sanitizer in final rinse of low-temp dish machine. Employee emptied cover from floor drain into trash, then sprayed hands off at dish washing station. Door to restroom in main kitchen is not self closing.

La Rosa (NorthWest Crossing): 82 — Raw pre-packaged chicken is stored over sliced mango in freezer. Raw tuna stored over salsa in cookline reach-in cooler. Salsa with fresh diced tomatoes is 48 degrees in walk-in cooler after cooling overnight. Can of oven and grill cleaner is stored on cookline shelf over prep table. No digital probe thermometer available. Bar muddler and utensils are stored in soda water between uses. Cookline knife is stored with blade between tables (difficult to clean area). Painted lemon press is chipping and unapproved for restaurant use. No thermometer available in front display cooler. Plate being used on cookline to scoop rice.

El Caporal (Twin Knolls): 84 — Cans of monster energy drink were stored in bulk bin of ice machine with ice used for consumption by consumers. No detectable chlorine in final rinse of low-temperature dish machine. Salsa and cut cabbage salad at room temperature without marked discard time. Multi-use can opener stored in holster on prep table with visible food debris. Soda nozzle behind bar had encrustation of debris. Wet wiping cloths stored on countertop by salsa and cabbage salad.

Health inspections were conducted by the Deschutes County Public Health Department and reflect violations observed at the time of inspection. The violations can range from general sanitation and maintenance to violations that have a direct connection to preventing foodborne illness to violations in procedures by maintenance that control the risk of foodborne illness, such as documentation, labeling, personnel training and equipment. During and after inspections, food vendors were allowed to correct violations to improve scores prior to a follow-up inspection.
