Terrebone Depot: 77 — Observed cook touching face and returning to work without washing hands. Cut tomatoes, raw chicken and beef at 50 degrees in cold hold unit for an unknown amount of time. No sanitizer in dish machine. Ice cream machine has a layer of slime.

The Stihl Bar: 77 — Person in charge (PIC) in kitchen used cloth towel from prep table to dry hands after washing. Roasted garlic in oil date marked June 13 (inspection done on June 22) in reach-in cooler. Tested kitchen dish machine after PIC had run “a couple” of times; no chlorine sanitizer available, dispenser container nearly empty. No chlorine test strips available to monitor dish machine. Pre-wash sink for dish machine used by PIC to wash hands.

Sora Sushi Restaurant: 79 — Raw shell eggs stored over onions and carrots in walk-in cooler. Industrial strength cleaner, gorilla glue and medicine stored over rice cooker. Open beverage cups in kitchen.

Nineteen at Awbrey Glen: 81 — Sausage gravy, fresh mozzarella and chipotle Caesar dressing are date marked over a week inspection. Hot dog condiments at snack bar have no covering (diced onion, shredded cheese and relish). No paper towels available at bar hand sink and snack bar is using nonperforated roll on counter which requires a dispenser.

Rancho Viejo: 85 — Beans made day before are at 56 degrees in walk-in. Cold top unit at 47 degrees. Chlorine sanitizer at 0 ppm at washing machine.

Sisters Saloon and Ranch Grill: 85 — Cold top was above 41 degrees. Dish machine in kitchen and at bar had 0 ppm sanitizer.

Tate and Tate Catering: 85 — Food in cold top above 41 degrees (cut ham and turkey at 48 degrees). Fan guards in cookie dough reach-in are dirty. Backflow is broken at mop sink.

Broken Top Bottle Shop and Ale Cafe: 85 — Second steam table holding foods between 115 and 125 degrees. Sea chowder and tahini garlic dressing date marked over a week before inspection.

Hot Lava Baking and Coffee Company: 85 — Large sandwich prep cooler holding between 48 and 50 on top and bottom. Dish machine not sanitizing. Three compartment sinks and dish machine are directly connected to the sanitary sewer. Food stored on floor of walk in. Laundry detergent container used to store oil. Door handles of reach in cooler are dirty.

Health inspections were conducted by the Deschutes County Public Health Department and reflect violations observed at the time of inspection. The violations can range from general sanitation and maintenance to violations that have a direct connection to preventing foodborne illness to violations in procedures by maintenance that control the risk of foodborne illness, such as documentation, labeling, personnel training and equipment.
