Boxwood Kitchen: 89 — Chlorine dish machine measuring 0 parts per million. Observed employee eating in kitchen upon arrival. No consumer advisory for aioli or undercooked egg.

Crux Fermentation Project: 87 — Half and half open date 20 days prior to inspection, mozzarella dated 13 days prior and ricotta salata dated 13 days prior, brie not dated. Bar dish machine measuring 0 parts per million chlorine. Noted open drinking container in kitchen, employee foods noted in bar refrigerators. Some unused equipment including cooking pot and burner held outside carport area.

Black Bear Diner (Bend) 85 — Sliced oranges and sliced tomatoes were stored under container of raw shell eggs in omelet prep cooler. Corned beef at 49 degrees, beef hash at 47 degrees in overfilled containers on sandwich prep line, bag of diced potatoes on cutting board at 57 degrees. Sanitizer buckets contain a mixture of Quat and chlorine sanitizer.

Teacupfuls: 84 — Goat cheese open date dated three months prior, mozzarella dated 10 days prior to inspection, cream cheese not dated, cooked chicken not dated. Tapioca pearls at room temperature not marked with time, waffle batter at room temperature not marked with time. Buckets containing wiping cloths with less than 100 parts per million Quat. Facility using black garbage bags to hold cotton candy.

Health inspections were conducted by the Deschutes County Public Health Department and reflect violations observed at inspection. The violations can range from general sanitation and maintenance to violations that have a direct connection to preventing foodborne illness to violations in procedures by maintenance that control the risk of foodborne illness, such as documentation, labeling, personnel training and equipment.
