Sunriver Resort unveils new dining concept

Sunriver Resort recently unveiled its newest dining concept, part of an expansion that more than doubled the size of the Caldera Springs resort community.
The Lake House at Caldera Springs has been added to the dining options at Sunriver Resort along with a walkup bar named the Shore Shack.
Caldera Springs, located adjacent to Sunriver Resort, is a private residential resort community with over 100 vacation rental homes.
General Manager Krista Miller was involved in launching the restaurant, which resides in the space formerly home to the Caldera Springs sales gallery and Zeppa Bistro, according to a press release.
“There’s a lot of shared plates,” said Krista Miller, general manager at the resort. “The chef really focused on creating a concept and a feel of the restaurant that is designed to bring people together.”
Shared plates include the “s’mores skillet” ($22), a charcuterie board with assorted meats and cheese ($45) and fried green tomatoes served with a spicy lemon aioli ($14).
Inspired by Central Oregon summer
Head Chef Krista Matheis, a graduate of Cascade Culinary Institute, has created a menu that captures her favorite aspects of the summer season such as gathering with friends and family and enjoying food in the beautiful outdoors, she said.
“My vision for this first Lake House menu was to really capture that ‘Central Oregon summer’ feel by bringing bright and fresh summer flavors, while still keeping the dishes comforting and familiar,” Matheis said.
Some of the dishes Matheis is most excited about include crab cakes with sweet corn puree ($24), warm brie with orange marmalade and blackberries ($20) and a bison burger with Oregon blue cheese ($28). On the entrees list, she recommends the salmon with lemon herb butter ($35) and the bone-in pork chop with peach compote ($30).
Matheis formerly worked as a sous chef under Executive Chef Josh Hedrick at Lodge Kitchen, Sunriver Resort’s signature restaurant.
“My time at the Lodge Kitchen was invaluable in helping me prepare to open and run the Lake House, and I am very grateful to have had the opportunity to work with Chef Hedrick,” Matheis said. “I learned so much more about the seasonality of ingredients, the huge benefit of using local vendors whenever possible and how to incorporate Northwest flavors into my dishes.”
The Lake House is open to the public daily along with its complementary snack venue, Shore Shack, serving coffee, pastries and cocktails.
