Wine and oyster bar Hasta que Olvidemos opened on the west side last week by owners of two of Bend’s existing watering holes, Brian and Ashley Trottier.

The concept takes an unpretentious approach to wine, offering a place to unwind in its sophisticated yet unstuffy locale on Galveston Avenue. The Trottiers partnered with winemaker Tim Colla, who sources label-less wines from California for this passion project, according to an Instagram post.

The well-curated atmosphere is reminiscent of sister projects, San Simón and The Flamingo Room, but with a flair of its own. The snack-focused menu is in service of complementing the wines, with oysters (market price), caviar ($27 or $72) and other snacks such as bread with anchovy butter ($10).

Until we forget

During the first official week of operations, two varieties of oysters were written in chalk on a board hung to the right of the bar. Higata oysters from Willapa Bay, Washington ($3 each) and Fanny Bay oysters from Baynes Sound, Vancouver Island ($3 each) were available by the half-dozen or dozen.

As advertised, the former had a hint of sweetness, and the latter was bigger with a strong briny flavor that was transformed by a spritz of lemon and the accompanying red wine vinegar mignonette sauce.

Dark chocolate oysters are also sold, fashioned by Dark Thoughts Sweet Shop, the maker behind the chocolate treats at the Trottier’s other two concepts.

Hasta que Olvidemos is located in the former building of the Kanona Cafe, which closed in September. It has the same wrap-around patio with some subtle changes to the interior, such as a partition wall extending from the side door that makes the dining area feel more private.

Initial hours of operation are 4 p.m. to close Wednesdays through Sundays, but the bar intends to move to daily operations, according to a recent social media post.
