Blue corn tortillas may be healthier than white corn tortillas, according to scientists in Mexico. The researchers found that tortillas made from blue corn had less starch and a lower glycemic index than white tortillas, but had 20 percent more protein.

There may be additional disease-fighting benefits as well. The blue coloring is the result of anthocyanins, the same antioxidant compounds in purple berries and red wine.
