Pho Viet & Café to open second Bend location

Pho Viet & Café is opening a second location in The Grove Market Hall in Northwest Crossing.

Owner Son Nguyen, who purchased the restaurant from the former owners in December 2022, plans to open the joint on Bend’s west side later this month in the former location of Greenleaf Juice.

The menu will, of course, include pho, the warming Vietnamese soup consisting of bone broth, rice noodles and thinly sliced beef, but also hot dog nachos, Vietnamese sandwiches such as bahn mi, Spam Musubi (grilled Spam alongside a block of rice) and boba tea.

“There’s going to be a lot of boba,” Nguyen said, adding that the tea drink is one of Pho Viet’s specialties.

Nguyen said he plans to appeal to high school students who frequent The Grove by offering something they can grab quickly.

“We’re really excited. Everyone’s been waiting for us to open on that side of town,” Nguyen said.

Since acquiring the Vietnamese restaurant, Nguyen has introduced a fresh logo to the business but has not made sweeping changes to the Bend restaurant.
