Last chance to try 5th Street Bagels’ sandwiches, a pop-up at The Grove

Jacob Dawley boils and bakes bagels in the middle of the night for his pop-up, 5th Street Bagels. By day, he slings Israeli street food for Shimshon at The Grove Market Hall in Bend’s Northwest Crossing.

He’s operated a pop-up bagel shop with made-to-order sourdough bagel breakfast sandwiches weekday mornings at Shimshon since January, but will be closing on April 5 at The Grove’s request, Dawley said.

After working six days a week and getting “a couple of hours of sleep here and there,” closing is bittersweet, he said.

While he’ll no longer be able to make bagel sandwiches for customers, the time and space will grant Dawley the ability to search for a brick-and-mortar. He’s brimming with ideas — and inventive bagel flavors — and wants to secure a spot that makes sense.

Dilly Dilly is a bagel made with dill and pickle juice. Other bagels are baked with everything seasoning, blueberries or za’atar, a Middle Eastern staple that combines sesame seeds, dried sumac, salt, thyme and oregano. Miracle Pumpkin is a flavored bagel named for a pumpkin that miraculously started snaking up a tree after Dawley’s mom threw a jack-o-lantern in the backyard, Dawley said.

Dawley said he’s always made bagels for friends and family but recently partnered with Steven and Amy Draheim, owners of the Barrio family of restaurants, to turn his hobby into a business. Steven guided him while Amy created a professional Instagram account — @bendbagels — introducing the concept online as, “a hobby full of heart, a guy with a sourdough start.”

Time is limited to order bagel sandwiches, but Dawley will continue selling three-packs of his bagels at retailers including Sebastian’s Seafood & Specialty Market in The Grove, Central Oregon Locavore, Bodega Market Bend and Austin Mercantile.

While Dawley searches for his next opportunity, he hopes customers will purchase the bagels to make their own bagel sandwiches.
