Kitchen Window Pizza, by owners of Scoutpost food truck, opens in Bend

- Kitchen Window Pizza was founded by the owners of the former Scoutpost food truck.
Despite the deluge of pizzerias in Bend, Kitchen Window Pizza is poised to fill a gap in the city’s food scene with its slow-fermented sourdough pan pizza and hand-rolled donut holes.
Fans of the former Scoutpost food truck (parked at Spoken Moto’s bygone food truck pod) will recognize some of its signature elements on the new menu. Siblings Brittaney MacFarland and Will Forbes are the founders of the newly minted pizza shop, in partnership with MacFarland’s husband Doug, former executive chef of Brasada Ranch.
As the name suggests, Kitchen Window Pizza is a window that slides open to accept takeout orders on Galveston Avenue. It resides in the small space that was briefly home to A Taste of Bend.
“This is my dream come true. Even though it’s tiny, I’m just so happy being in here. It makes me happy every day to come in and bake,” Brittaney said.

Artisanal meets comfort
Light streamed in through the east-facing window last week as Brittaney spread each lump of dough into an 8.5-inch square pan with her fingers. The dough had sat overnight to ferment and would be allowed to sit one more night to develop a light, airy interior before making its way to a customer.
Brittaney bakes sourdough for her kids every week, which spawned the idea for the sourdough pizza concept, she said.
The dough is mixed with flours by organic Central Milling and Camas Country Milling. Tomatoes are sourced from Bianco DiNapoli, organically grown in Northern California. And pizza toppings come with creative combinations, such as the meatball pizza with grass-fed beef and pork, a blend of cheeses and a heavy hand of drizzled pesto.
“We do have pepperoni and traditional toppings, but we wanted to do more playful things as well,” Brittaney said.
Pizza and donut holes
Scoutpost’s fried chicken sandwich inspired the Spicy Chicken Parm pizza, topped with crispy breaded chicken and a blend of three cheeses ($21.50).
Each bite of the pan pizza feels like an adventure of flavor, elevated by Forbes’ housemade hot sauce. The amalgamation of chicken parmesan and fried chicken sandwich, adapted for the canvas of sourdough, makes sense.
Each pie comes with a side of ranch, whipped up with Forbes’ own mayonnaise.
The small but mighty menu also features the same donuts previously sold by Scoutpost. Five donut holes fried to order are served with sides of sea salt butterscotch and vanilla mascarpone cream and sprinkled with powdered sugar ($10). The puffy, melt-in-your-mouth clouds of goodness make for an especially sweet ending to the meal.

One day, Brittaney hopes to build a small patio for customers to sit and eat their pizza. But until then, neighboring businesses along Galveston haven’t been shy in offering their support, she said.
Boss Rambler Beer Club invites Kitchen Window customers to wait and enjoy pizzas at its restaurant and a collaboration with 10 Barrel Brewing Co. is in the works.
Directly in front of the pizzeria is a single parking space saved for customers of the Kitchen Window, best accessed by driving east on Galveston.
