The Sparrow Bakery’s claim to fame is the Ocean Roll: traditional croissant dough made by hand, layered with cardamom, sugar and vanilla, rolled in a cinnamon-bun shape and baked. The pastry is by far the bakery’s most popular item, and the reason the establishment is Where to GO! for pastries in Central Oregonians’ minds.
French-trained bakers Whitney and Jessica Keatman opened the Scott Street location of The Sparrow Bakery in 2006, and expanded with a Northwest Crossing location about four years ago.
Other favorite pastries include Choux pastry, éclairs, cream puffs, Parisian macarons and individual-sized tarts. The bakery is working to add more vegan and gluten-free options at its Scott Street location, general manager Cari Brown said.
“We are just so grateful for the community support and for all of the people who come here and bring their friends and family to eat with us when they come to visit,” she said.
