Food: Step inside, smell the smoked meat aroma, and you won’t want to leave without at least tasting a morsel of pork, beef or turkey. If you want a meal, Primal Cuts has a nice assortment of sandwiches and charcuterie boards (meats and cheeses with mustards, vegetables and crackers), plus daily specials. I’ve visited twice and opted for sandwiches, one menu choice (house-smoked turkey breast and thick sliced bacon with fresh avocado, arugula and tomato mayo on a house-made focaccia bun) and one special (house-smoked turkey, cream cheese with rosemary, cranberry sauce and arugula on a Sparrow Bakery hoagie roll). After the first visit, I was excited to go back. Turkey, bacon and avocado are a popular combo; the smoked meats and house-made bread make the sandwich like nothing else in Bend. The special, also delicious. I had the house-made soups during each visit, split pea with ham and chicken risotto. I’d have either one again.
Service: Order at the counter and the food is brought out when it’s ready. Staff was friendly, helpful and helped seated customers if there was a request or a table needed to be cleared.
Atmosphere: Rustic, natural wood. Cold cases showcase meats for sale, house-made broths and prepared meats and salads. There are separate walk-up counters for beer (38 taps) and food. Seating is limited.
