Editorial: Fight invasive species, eat green crab

Biologists want you to start thinking about adding something new to your diet: green crabs.

It’s an invasive species which apparently came to the west coast from Europe in the 1980s. Since then they have been pushing out native Dungeness crab.

That’s where you come in. Start asking for it when crab is on the menu, or even if it is not.

The problem, as OPB reported, is that green crabs are smaller. That makes them less suitable to crack open and eat like you would a Dungeness. Chefs are going to have to use different recipes.

If green crabs take off on the menu, it might help native species.
